Shrak Bread and a breakfast idea خبز الشراك وفكرة للفطور
Shrak bread is one of the yummiest (personal favorite) elements of the Palestinian cuisine. It is a type of thin bread prepared from a mixture of whole wheat and white flour, salt, and water. This type of bread goes back to the Ottoman period and is widespread in Palestine and Jordan mostly.
Shrak bread is used in many traditional dishes such as Mansaf, Shawerma, barbeques, or even just for breakfast. What's special about shrak bread is its preparation. People usually buy it from local bakeries that use the Saj to bake the bread. Watching the baker make shrak bread is always fascinating.

خبز الشراك يستخدم بأطباق تقليدية مختلفة زي المنسف، الشاورما، المشاوي، أو حتى للفطور. إلي بميز هادا هادا الخبز هو طريقة تحضيرها؛ الناس بالعادة بشترو من المخابز إلي بتستخدم الصاج لتخبزو. مشاهدة الخباز وهو يحضر خبز الشراك من أحلى الأشياء الممكن تشوفها.
As a carb-fearer, and still in a culture where bread is almost a piece of cutlery for eating, shrak bread is always my saviour. It is light, delicious, and can still be a great substitute for pita or other breads. I have endless ways of eating shrak bread so today I am sharing with you a simple, quick breakfast idea using shrak bread. You can always get creative with it and add your favorite flavours and filling or simply what's available in your pantry and fridge.
I paired this delicate bread with another Palestinian essential: nabulsi white cheese. I can say that this is the only traditional cheese in the Palestinian cuisine. The closest cheese to our nabulsi white cheese would be halloumi cheese.
Nabulsi White cheese and zaa'atar shrak bread sandwich:
1- I took half a shrak bread, lined slices of the nablusi white cheese (which can be substituted with other types of white cheese), a big dash of za'atar (another Palestinian delicacy), and sumaq.
2- I wrapped the sandwich similar to burrito wrapping and toast it for 3-4 minutes until cheese melts and you get the beautiful grilling marks.
3- Enjoy it with a lot of vegetables (cucumbers, cherry tomatoes, mint leaves) and fruits for a full breakfast/lunch. A cup of tea is always a good idea too.
