Breakfast Idea: Palestinian Ejjeh فكرة فطور: العجة الفلسطينية
Ejjeh is a delicious Palestinian breakfast dish that is prepared for special breakfasts and Friday brunches. Ejjeh is prepared in many Middle eastern countries in different variations such as the Lebanese ejjeh with zucchini and yogurt and the Syrian ejjeh which is usually eaten with a parsley lentil soup. Similar to an omelette , ejjeh can have as many vegetables as you'd like yet the simplest, most common ejjeh has two ingredients: parsley and onions. Flipping the ejjeh is the hardest part. I'm still not professional at it. Enjoy it with some fresh vegetables; cherry tomatoes, cucumbers, and more parsley. And of course some whole wheat bread. Sahha w Hanna.
العجة من أزكى الأطباق الفلسطينية للفطور وإلي بتتحضر للفطور المميز وخصوصاً فطور يوم الجمعة المتأخر. العجة بتتحضر في أكتر من بلد في الشرق الأوسط بطرق مختلفة زي العجة اللبنانية بالكوسا مع اللبن أو العجة السورية إلي بتتقدم بالعادة مع شوربة العدس. زي الأومليت، العجة ممكن يضافلها خضراوات زي ما بدنا بس أنا بحب أخليها بسيطة وعلى أصولها مع المكونيين: البقدونس والبصل. قلب العجة مش سهل أبداً. لسا لهلا ما بزبطها ١٠٠٪. استمتعوا فيها مع خضراوات طازجة؛ بندورة كرزية، خيار، وكمان بقدونس. وأكيد خبز القمح الكامل. صحة وهنا.

Ingredients
2 medium sized eggs
1/2 cup chopped parsley
1/4 cup onion, finely chopped
1 tbsp olive oil
Salt and pepper
Sumac

١/٢ كوب بقدونس مفروم
١/٤ كوب بصل، مفروم ناعم
١ معلقة كبيرة زيت زيتون

Method
Whisk eggs using a fork in a bowl, add salt, pepper, sumac (as preferred), and chopped parsley and onions and mix.
Heat olive oil in a pan and add egg mixture into one thin layer.
When cooked and starting to golden brown, flip the ejjeh and leave on low heat for 2-3 minutes.
Transfer to a dish or keep in pan and garnish with more parsley and sumac.
