Veggie Wrap لفة (راب) الخضار
A friend of mine asked me to post easy and quick breakfast/lunch ideas. Being a good friend, I am working on that. Breakfast ideas for me are just improvised on the spot. I think about what I'm craving, what I have in my pantry, and how much time I have. This time I was craving something savoury and filling so I decided to make a full veggies wrap. For my version: I'll use shrak (saj) bread. You can use any available bread; tortilla, ciabatta,.. etc.
The spread: hummus, of course. Grilled veggies: zucchini and bell peppers. You can add what's in the fridge. For grilling the veggies: heat olive oil in a small pan nd grill the veggies on both sides until tender and golden brown in color. Now fresh veggies for a crunch: carrots (used the peeler for thin slices), cherry tomatoes, and arugula. Final touches: za'atar (dried thyme & sesame mix) and crumbled white Nabulsi cheese (any type of white cheese works). Roll like a burrito- one of the skills I mastered in my last job & grill for a couple of minutes. Who could believe veggies could fill you up?
